This remarkable region is bordered by the steep canyons of the Mara\u00f1\u00f3n Valley. It gives its name to our 70% dark chocolate <em>San Ignacio 70<\/em>, as a tribute to its original terroir.<\/p>\r\n<p>Despite the high altitude \u2014 between 1,000 and 1,250 meters \u2014 the region benefits from an exceptional microclimate and marked isolation. These conditions have made it possible to preserve a variety of cacao long thought to be extinct: a genetically pure Nacional.<\/p>\r\n<p>Since 2010, this cacao has been part of an exceptional preservation program, supported by 400 farmer-owners in the region, who are organized around a model post-harvest processing center.<\/p>\r\n<p>After several years of experimentation, the post-harvest center developed a rigorous fermentation and drying protocol. This process brings out the extraordinarily delicate aromas of this one-of-a-kind cacao.<\/p>\r\n<p>The 70% dark chocolate <em>San Ignacio 70<\/em> : a pure Swiss bean-to-bar, true to its origin and committed to ORF\u00c8VE\u2019s ethics.<\/p>\r\n","protected":false},"excerpt":{"rendered":"<p>Dark chocolate 70% native Nacional from Peru.
