The small town of Quillabamba lies on the foothills of the Andes in southern Peru. It is located just a few kilometers from the famous Machu Picchu. This is where the beans for our no added sugar Dark Chocolate Apple & Mace originate.
Quillabamba borders the Urubamba River, on the edge of the Sacred Valley of the Incas. Its forests are home to one of the rarest indigenous cocoa varieties in the world: Chuncho. It appears as very small beans with delicate, concentrated aromas.
Around a hundred families cultivate this precious cacao at an average altitude of 1,200 meters. They do so in strict accordance with the principles of organic farming and agroforestry.
Harvested between January and April, it benefits from a gentle fermentation in wooden crates and natural sun-drying under the supervision of Peruvian agronomists.
Our no added sugar Dark Chocolate Apple & Mace fully embodies ORFÈVE’s bean-to-bar philosophy: respect for the terroir, respect for people, technical mastery, and demanding taste.
It contains only three ingredients: a Gala apple of about 200 grams delicately freeze-dried, exceptional cacao, and a hint of mace.
With no added sugar, this creation reveals a dense and indulgent texture, true to the generosity of the fruit it contains.
