The province of San Ignacio stretches across the northernmost part of Peru, between the foothills of the Andes and the Amazon rainforest. This remarkable region is bordered by the steep canyons of the Marañón Valley. It gives its name to our 70% dark chocolate San Ignacio 70, as a tribute to its original terroir.
Despite the high altitude — between 1,000 and 1,250 meters — the region benefits from an exceptional microclimate and marked isolation. These conditions have made it possible to preserve a variety of cacao long thought to be extinct: a genetically pure Nacional.
Since 2010, this cacao has been part of an exceptional preservation program, supported by 400 farmer-owners in the region, who are organized around a model post-harvest processing center.
After several years of experimentation, the post-harvest center developed a rigorous fermentation and drying protocol. This process brings out the extraordinarily delicate aromas of this one-of-a-kind cacao.
