ORFÈVE presents here a 70% dark chocolate bar from Peru: Quillabamba 70. It is made from Chuncho cacao, a rare indigenous variety grown at 1,200 meters altitude in an organic agroforestry system.
The town of Quillabamba is nestled in the foothills of the Andes, in southern Peru. It borders the Urubamba River at the gateway to the Sacred Valley of the Incas, not far from the famous Machu Picchu.
This precious cacao is cultivated by about a hundred families, strictly respecting organic farming and agroforestry principles. It grows as very small beans with concentrated and delicate aromas.
Harvested between January and April, it undergoes a gentle fermentation in wooden boxes. The drying process is then carried out naturally, under the sun, supervised by Peruvian agronomy experts.
This 70% dark chocolate is the result of a mastered bean-to-bar craftsmanship, from the bean to the bar. It reveals all the finesse of Chuncho cacao, one of the rarest varieties in the world, elevated by ORFÈVE’s craftsmanship.
