Choosing and Understanding Your Chocolate
Veganism excludes all consumption of animal-derived products. At first glance, chocolate seems compatible,it comes from a plant, the cacao tree. Yet not all chocolates are vegan. Understanding the differences between chocolate types, common additives, and production methods helps identify true plant-based options without confusion or compromise.
Is Dark Chocolate Always Vegan?
Pure dark chocolate, made solely from cocoa beans, cocoa butter, and sugar, is generally vegan by nature. It contains no milk, honey, or other animal ingredients.
However, some dark chocolates may include:
– flavorings that contain animal-derived components,
– or be produced in facilities where dairy cross-contamination occurs.
A “vegan” label guarantees the absence of cross-contact, but a well-crafted bean-to-bar chocolate is often fully plant-based, even without certification.
At Orfève, our dark chocolate collection is crafted exclusively from plant-based ingredients. Our milk chocolate collection, by definition, contains dairy milk.
Plant-Based Milk Chocolate: A Real Alternative?
More and more craft chocolatiers are offering plant-based milk chocolates using:
– coconut milk,
– oat milk,
– rice or almond milk,
– or even hazelnut or cashew purées.
These ingredients add creaminess, smoothness, and fat, creating luscious, lactose-free chocolates.
The taste differs from traditional milk chocolate, but it can be more delicate, digestible, and expressive in terms of flavor, especially when made with quality cacao.
Beware of Ultra-Processed Products
The rise of veganism has led to a wave of industrial “vegan” chocolate bars. But not all are created equal:
– some are overly sweet,
– others rely on vegetable oils, thickeners, artificial flavors, or lecithins to replace milk.
Whether vegan or not, a truly high-quality chocolate should remain simple, transparent, and pure. The quality of the beans, the craftsmanship, and the restraint in formulation matter more than the label.
In the end, the ingredient list is your best guide: it will tell you whether the chocolate is truly vegan, and whether it meets real standards of quality.
Orfève’s Approach
At Orfève, our dark chocolate collection is crafted exclusively from fine origin cocoa beans, raw cane sugar, whole cane sugar, fruit when used, cocoa butter and nothing else.
We never use lecithin or additives. Our recipes are designed to express intensity, finesse, and traceability that respect both ethics and taste.
Whether dark or milk chocolate, every Orfève bar is produced with the same commitment to transparency, traceability and ingredient integrity. Each recipe is deliberately simple, allowing the quality of the cocoa, and, where applicable, the milk, to express itself naturally.
