How Do Microclimates Influence the Taste of Cocoa?

Like wine or coffee, cocoa is deeply shaped by the climate in which it grows. But beyond broad geographical zones, it’s often microclimates, local variations in temperature, humidity, sunlight, or altitude, that give cocoa its unique flavor profile.

The same type of cacao tree, planted just a few kilometers apart, can yield beans with completely different sensory characteristics. Why? Because cocoa’s taste is the language of place, it expresses the complexity of its environment.

Let’s look at a few examples:

  • Higher altitude can slow pod maturation, allowing for more delicate or floral aromas.

  • Frequent mist or high humidity may enhance vegetal or fermentary notes.

  • Sharp day–night temperature shifts, like those in mountain valleys, can yield more complex, balanced profiles.

  • Volcanic soils, specific forest cover, or distinct drainage patterns also shape a cocoa’s final aromatic signature.

Microclimates also affect fermentation: the hotter the air, the faster the fermentation; the more humid it is, the slower the drying process. And since both stages are crucial to flavor, it’s this subtle interplay, between climate, terroir, farming practices, and fermentation expertise, that gives each cocoa its distinctive identity.

We select cocoas from very specific areas, sometimes just a few parcels within the same region or country, chosen for their unique profiles. Then, we adjust our roasting, grinding, and conching settings to fit the specific traits of each batch.
