Our Geneva-based workshop is neither an automated lab nor a simple production facility.
It’s a place of precision, transmission, and demanding, repeated gestures.
Morning: Precision and Preparation
At opening, the team checks the parameters of the batches to be produced: origin, aromatic profile, residual humidity, texture.
Each chocolate has its own tempering curve, its own requirements, density, and personality.
The day begins with quality checks, precise weighing, and machine diagnostics.
Production: The Hand Behind the Machine
Grinding is done slowly, at low temperature. Conching is customized for each batch, no rigid automation.
Here, machines do not replace human judgment; they extend the hand.
Conches are closely monitored: temperature, acid evaporation, texture… everything is observed to ensure the chocolate evolves as it should.
As for molding, it’s precise and consistent, but each bar is still inspected by eye.
Shine, regularity, and shape must be perfect.
And above all, the flavor must remain faithful to our vision: a true expression of the terroir.

Throughout the day, our team applies the same production principles:

Evening: Maturation, Cleaning, Foresight
Once unmolded, the bars enter their maturation phase to complete crystallization under optimal conditions.
Meanwhile, the team cleans, tidies, and takes notes. Because at Orfève, every production day feeds the next.
We don’t duplicate. We refine.
