Why Orfève Doesn’t Make Pralinés, Ganaches or Truffles: The Logic Behind the Choice

At Orfève, we’ve made a clear decision: not to produce pralinés, ganaches or truffles,despite their place in the great chocolate tradition.
This is neither a rejection of pleasure nor of tradition. It is a matter of coherence.

A full commitment to cacao

We are chocolate makers, not chocolatiers or confectioners. This means that we work with the cacao bean, from its origin all the way to the finished bar. No fillings, no ganache, no ground nuts. Cacao, sugar, fruit or milk depending on the collection, all handled with the same exacting standards and processes adapted to each recipe.

This choice requires a rare degree of specialization: our manufacture remains entirely dedicated to making chocolate, from raw ingredients to the finished bar. This allows us to precisely control every parameter of the production process.

A lab without compromise

Our recipes are deliberately short: cacao and sugar, fruit in our Noir de Fruits collection, or Swiss milk from Geneva in our Noir de Lait collection. This simplicity allows us to focus our work on the raw ingredients, their balance, and their transformation.

Introducing pralines or ganaches would require developing different skills and an entirely different approach to production. That is not the path we have chosen today.

The chocolate bar as a complete object

We believe that the chocolate bar can express everything. It can be melting, grainy, tender, powerful, complex, soft, vibrant. Our four collections, Noir de Noir, Brut de Noir, Noir de Fruits and Noir de Lait, explore different textures, taste profiles and expressions of cacao.

Making chocolate from bean to bar is our way of staying as close as possible to the ingredients and to what they can express.

And tomorrow?

Nothing is set in stone. We move forward with curiosity, listening to ideas, to ingredients, to inspiration. At Orfève, we never say “never”: if one day a creation feels right, true to our vision and our level of craft,we’ll explore it.
But always with the same rigor: one that puts flavor, origin, and meaning before form.
