In the world of bean-to-bar chocolate, the cocoa bean buyer plays a strategic and often underestimated role. Far from the image of a commodity trader, this is a profession grounded in fieldwork, sensory skill… and precision.
Behind every exceptional chocolate bar lies a series of decisive choices, and the first is the bean.

A Profession at the Crossroads of Expertise

A cocoa buyer is much more than a logistics specialist. Their work sits at the intersection of several areas of knowledge:

  • Agronomy : understanding varieties, diseases, and cultivation practices.

  • Sensory Analysis : evaluating the aromatic potential of the beans.

  • Ethics : selecting partners committed to fair labor and sustainable farming.

  • Technical Understanding : anticipating how each bean will behave during transformation.

A skilled buyer knows that a bean cannot be judged solely by appearance or origin. It must be assessed through dialogue with the grower, fermentation traceability, cut tests, roasting trials, and tasting the nibs.

Terroir, Variety, Fermentation: The Triple Standard

Each cocoa origin has its own unique profile. But to fully express its potential, three factors must come together:

  • A distinctive terroir : climate, altitude, and soil all influence the bean’s chemical composition.

  • An appropriate variety : heritage types like Criollo or Nacional can offer delicate aromas but are more sensitive to disease.

  • Well-managed fermentation : even the finest beans can’t shine without precise fermentation.

The buyer must understand this entire value chain and often works closely with growers to co-develop fermentation protocols.

A Long-Term Commitment

Unlike the industrial cocoa trade, which relies on standardized, interchangeable lots, the bean-to-bar approach is built on long-term relationships. A good buyer seeks consistency, reliability… and trust.

This means regular trips to origin, lab testing, sampling each harvest, and constant refinement. It’s not about placing an order, it’s about building a foundation of excellence, season after season.

At Orfève, our cocoa sourcing is done in partnership with expert sourceurs whose standards are at least as high as ours. Every origin is selected directly by us, after in-depth tastings, technical trials, and dialogue with both the sourceur and the producer.

We don’t seek the easiest beans to process. We look for beans that have something to say, a flavor, a story, a potential.
