Latin America also remains the region where the cultivation of heritage cocoa varieties is most actively preserved, despite the economic pressure to replace them with higher-yielding hybrids.
Ideal yet contrasting climates
From Mexico to Bolivia, through the Andes and the Amazon, Latin America encompasses an extraordinary range of microclimates. High-altitude cocoa in Peru, lowland cocoa from the Amazon Basin, and the volcanic terroirs of Central America all contribute to an exceptional diversity of growing conditions. These conditions can vary dramatically not only from one country to another, but even from one valley to the next within the same region. This remarkable diversity allows cocoa beans to develop rich and distinctive sensory profiles, often revealing notes of yellow fruit, citrus, white flowers and delicate spices.
Increasing precision in post-harvest handling
Many Latin American producers place particular emphasis on fermentation and drying. These essential post-harvest stages are often carried out directly on the farm, following increasingly precise protocols. This meticulous approach produces beautifully fermented cocoa beans with clean, expressive aromas, free from excessive acidity or harsh, underdeveloped fermentation notes.
Cacaos prized for their complexity
Latin American cocoas are often described as delicate, elegant and vibrant. Less powerful than many West African cocoas, they express themselves through subtlety rather than intensity, with floral, fruity and sometimes honeyed notes. These are tasting cocoas, whose finesse is often closer to that of a fine tea or a crisp white wine than to the boldness of an espresso.
