How We Develop Each Chocolate Recipe at Orfève

At Orfève, a recipe can be born from an intuition, a desire, or an idea waiting to take shape.
But it is never imposed on the material. It is always built with the cacao, never against it.

An Intuition Guided by the Bean

We begin with a desire, a texture, a sensation, a potential pairing, and then listen to what each bean can truly offer.

The soil, the fermentation, the roast, and the raw tasting confirm or refine our initial intention.

The recipe then evolves step by step: roasting, refining, conching, balancing.
Nothing is set in stone. Everything is adjusted so the material remains vibrant and coherent.

Creating a recipe, for us, means first listening to:

– the terroir,

– the fermentation,

– the density,

– the natural notes.

Sugar is never there to mask or soften. It’s there to support.

And when absent, as in our Noir de Fruits collection, we rely on the natural sweetness of fruit, chosen for its accuracy, not for its effect.

Three Collections, Three Philosophies

  • Noir de Noir: the classic bean-to-bar style, smooth, deep, refined.

  • Brut de Noir: a textured, granular, powerful chocolate with unconched sugar crystals.

  • Noir de Fruits: a no-added-sugar chocolate, where fruit brings both sweetness and structure.

Each collection is based on the same fundamentals:

  • strictly selected ingredients,

  • artisanal transformation,

  • a search for flavor coherence in every bite.

A Creation at Orfève Takes Time

Sometimes it takes us months, even years, to finalize a recipe.
Because we refuse shortcuts. Because a chocolate can only be right if it remains true to the material it comes from.

And because each bar tells a story, of a cacao well grown, well fermented, and well crafted.
