Understanding Cocoa
Asia is not always the first region that comes to mind when thinking about cocoa. Yet Southeast Asia has emerged as one of the world’s most dynamic regions for fine-flavour cocoa production. Indonesia, the Philippines, Malaysia, Vietnam, Southern India and Sri Lanka are all cultivating cocoa beans with distinctive aromatic identities—often overlooked, yet increasingly sought after by bean-to-bar chocolate makers around the world.
A young cacao origin, full of promise
Cocoa is not native to Asia. It was introduced during the colonial era, primarily for commercial purposes. Over the past two decades, however, the sector has undergone a remarkable transformation, with the emergence of small-scale plantations, increasingly refined fermentation practices, and a growing appreciation for the region’s genetic diversity and cocoa varieties.
In some regions, cocoa trees are grown beneath the canopy of other crops such as banana trees, coconut palms and mango trees, creating agroforestry systems that encourage greater aromatic complexity.
Unexpected aromatic profiles
Asian cacaos are known for their often spicy, vegetal, or woody notes, paired with a subtle yet persistent structure. Depending on the terroir, one may detect:

black tea or mild tobacco (Vietnam, India)

woody or lightly smoky notes (Indonesia)

or even hints of exotic fruits, lychee, or lemongrass (Philippines, Sri Lanka).
When well fermented and dried, some lots reveal a surprising finesse, earthy, yet elegant and aromatic.
A post-harvest challenge still in progress
The greatest challenge remains the rigorous control of post-harvest processing. In hot and humid climates, fermentation and drying must be managed with exceptional precision. In many producing regions, however, these critical stages are still evolving, which can lead to inconsistencies in the quality and aromatic expression of the cocoa.
A new generation of producers is now committed to raising these standards, working in close partnership with specialised cocoa sourcers and artisan chocolate makers to refine post-harvest practices and unlock the full potential of their beans.
