Pure dark chocolate (starting from 85% cocoa content) is the most compatible with a low-GI or keto diet because it contains:
– little sugar,
– low net carbs,
– a high ratio of plant-based fats (cocoa butter),
– and no starch, flour, or fast sugars,if properly formulated.
An artisanal dark chocolate that is low in sugar, free from lecithin and artificial flavors, becomes a dense, satisfying, low-carb food that fits into a ketogenic or low-glycemic lifestyle.
What to Avoid at All Costs
Some products claim to be dark chocolate but actually contain:
– 40–50% sugar,
– insulin-spiking sweeteners like maltitol,
– added vegetable fats other than cocoa butter,
– additives, thickeners, or fillers.
Even a bar labeled 70% cocoa can spike blood sugar and disrupt ketosis if it is too sweet or ultra-processed.
What About “No Added Sugar” Chocolate?
