Which Sugar for Which Chocolate?

In a dark chocolate bar, sugar doesn’t just “sweeten”. It plays a structural and balancing role, and can even highlight or mask certain flavor notes. The choice of sugar is therefore a key element of creation, both for taste and nutritional reasons.

Sugar as a revealer… or a cover-up

In industrial chocolates, sugar is often used excessively. Not just to appeal to palates accustomed to very sweet products, but also to mask bitterness or the poor quality of under-fermented or poorly roasted cocoa.
The result: a uniform taste, where sugar dominates and drowns out the natural flavor of the beans.

In contrast, in a well-crafted bean-to-bar chocolate, sugar is precisely dosed to balance bitterness, bring out aromas (fruits, flowers, spices…), and support texture. It becomes a complementary ingredient, not a substitute.

What sugar options exist?

  • Refined white sugar: Neutral in taste, it lets the cocoa’s aromas shine through faithfully. However, its high glycemic index is sometimes criticized.

  • Raw cane sugar: Slightly caramelized, it adds a subtle roundness. Often favored in artisanal chocolates for its softness.

  • Whole cane sugar (rapadura, muscovado): Rich in molasses, it offers bold and interesting notes (licorice, dark caramel, spices) that can enhance cocoa flavors.

  • Coconut, birch, agave, date, etc.: These lower glycemic index alternatives are sometimes used in specific recipes but strongly alter the mouthfeel, both in taste and texture.

What about sugar-free chocolate?

Some chocolates, especially 100% bars, contain no sugar at all. They don’t suit every palate but may be appreciated for their raw intensity, as long as they’re well-balanced in fat content.

There are also recipes with no added sugar but with natural sweeteners such as maltitol or erythritol. However, their impact on taste and texture varies widely, and not all are well tolerated.

Orfève’s Approach

At Orfève, in our Noir de Noir collection, we use two types of sugar: organic raw cane sugar and organic whole cane sugar – unrefined. Their subtle taste respects the cocoa’s aromas, and their moderate glycemic index makes them a balanced choice.
In the Brut de Noir collection, we use only unrefined raw cane sugar to create that unique crunchy texture.
And in the Noir de Fruits collection, no added sugar at all! The sweetness comes from 200 grams of fruit per bar.

Each recipe is carefully calibrated based on the cacao origin and the desired sensory experience: some origins express themselves better at 70%, others at 75% or 80%. The percentage isn’t a promise of quality, it’s a balance, always designed to showcase the bean.
