The Craft of Chocolate
The term “couverture maker” refers to a chocolate manufacturer — but not just any chocolate manufacturer.
A couverture maker is a chocolate manufacturer who transforms cocoa beans into couverture chocolate. This chocolate is supplied in blocks or callets, ready to be melted, tempered, and used by professionals (chocolatiers, pastry chefs, ice cream makers, and others) to create ganaches, pralines, coatings, confections, molded chocolates, and decorations.
It is therefore a semi-finished product, ready to use and designed to provide optimal fluidity and technical consistency, rather than primarily for direct tasting.
Couverture Maker or Chocolatier: Two Distinct Professions
Unlike a chocolatier, who works with chocolate as an ingredient to create finished products without producing the chocolate itself, a couverture maker produces chocolate directly from cocoa beans. Operating upstream in the value chain, couverture makers generally supply professionals rather than the general public.
Historically, couverture makers remained largely unknown to consumers because they worked exclusively for the professional market. Yet their chocolate is the foundation of hundreds of artisanal creations, even though their names often never appear on the packaging.
Some names have nevertheless emerged as hybrid brands, supplying professionals while also producing products for the general public. This is the case with companies such as Valrhona and Michel Cluizel in France, or Lindt and Felchlin in Switzerland.

Orfève thus embodies a new and rare form of craftsmanship: that of an independent chocolate maker, working through a short supply chain and transforming cocoa beans for its own brand, without intermediaries or standardization.
This approach is rooted in the bean-to-bar movement, but with standards of precision and consistency that go beyond artisanal production alone.
