Behind every bar lies a series of carefully mastered steps, each one intentional, refined, and uncompromising. From bean selection to the final mold, every action has a purpose, every choice a reason.

  1. Bean selection: a decisive starting point

It all begins far from our Geneva manufacture, in farms, plantations, and cooperatives.

We work only with fine-flavor cacao: well-fermented, traceable, grown with care for the soil and respect for the men and women who cultivate it.
Each origin is tasted, tested, analyzed. This isn’t a raw material, it’s a living substance born from a human gesture we strive to honor at every step.

  1. Roasting: revealing, not masking

Roasting is one of the most delicate stages in our craft.
Tailored to each batch, origin, and aromatic profile, it determines nearly 80% of the final tasting experience.

A few degrees or minutes off can change everything.

No standardized profiles. No fixed temperatures.

Our approach seeks balance,bringing out floral, fruity, woody, or spicy notes without burning the finer ones.

Here, every second counts.

  1. Grinding, refining, and conching: the art of perfect timing

We grind slowly, at low temperatures, to preserve the cacao’s natural volatile compounds.

Refining on stone mills, followed by long, controlled conching, smooths the texture, removes residual acidity, rounds the tannins, and softens the astringency, without stripping the soul of the bean.

No lecithin. No added flavors. Just patient, precise work on the chocolate mass itself, designed to reveal what nature and terroir have already imprinted in the bean.

  1. Tempering: precision and stability

Tempering is a quiet science.
It ensures the cocoa butter crystallizes properly, for shine, a clean snap, and optimal structure.

At Orfève, each chocolate has its own tempering curve, defined by its origin, cocoa butter content, and vintage.

These curves aren’t fixed, they’re adapted each time, like a winemaker fine-tunes their vinification.

Every bar reflects watchful eyes and skilled hands, beyond any rigid protocol.

We use machines, yes, but never automation. The hand has the final say.

  1. Molding: form in service of flavor

Our bars are flat, fine, graphic. Their pyramid-shaped design is inspired by the Clou de Paris, a classic motif from Swiss watchmaking.

It’s not decorative, it’s functional: enhancing melt, sensory perception, and light reflection.

A precise, custom-made mold,so that form never betrays flavor.

  1. Maturation: letting chocolate reach full expression

Every Orfève bar goes through a resting phase after molding.

Over several weeks, the chocolate completes its crystallization, balances its aromas, and refines its texture.

This invisible stage is essential: it allows the chocolate to express its full finesse with elegance and stability.

Like a fine wine or aged cheese, great chocolate needs time to find its depth.
