Why Orfève Doesn’t Make Pralinés, Ganaches or Truffles: The Logic Behind the Choice

At Orfève, we’ve made a clear decision: not to produce pralinés, ganaches or truffles,despite their place in the great chocolate tradition.
This is neither a rejection of pleasure nor of tradition. It is a matter of coherence.

A full commitment to cacao

We are chocolate makers, not confectioners. That means we work directly from the cacao bean, from origin to bar. No fillings, no ganaches, no cream, no ground nuts. Just cacao, transformed with precision using artisanal processes tailored to each origin.

This choice requires a rare form of specialization: our entire workshop is dedicated exclusively to processing pure cacao.
It guarantees full traceability and a precise command of every parameter in our production.

The chocolate bar as a complete object

We believe that the chocolate bar can express everything. It can be melting, grainy, tender, powerful, complex, soft, vibrant. Our three major collections, Noir de Noir, Brut de Noir and Noir de Fruits, already embody three textures, three taste architectures, three fully sensorial experiences.

Creating pure chocolate is our way of staying close to the essence of cacao, without distraction.

And tomorrow?

Nothing is set in stone. We move forward with curiosity, listening to ideas, to ingredients, to inspiration. At Orfève, we never say “never”: if one day a creation feels right, true to our vision and our level of craft,we’ll explore it.
But always with the same rigor: one that puts flavor, origin, and meaning before form.
